Einkorn Flour Apple Galette

Serves 6–8

Ingredients

For the Dough:

  • Einkorn flour – 1 ¾ cups

  • Cold unsalted butter – ½ cup (1 stick), cut into small cubes

  • Coconut sugar – 2–3 tbsp (for slight sweetness in crust)

  • Salt – ¼ tsp

  • Ice water – 4–5 tbsp

For the Filling:

  • Apples – 4 medium, peeled, cored, and thinly sliced

  • Coconut sugar – 3–4 tbsp

  • Maple syrup – 2–3 tbsp

  • Cinnamon – 1 ½ tsp

  • Lemon juice – 1 ½ tsp

  • Vanilla extract – ½–1 tsp

  • Butter – 1–2 tbsp, cut into small pieces

Optional Topping:

  • Egg wash – 1 egg, beaten with 1 tsp water

  • Turbinado sugar or coconut sugar – for sprinkling

  1. Make the dough:

    • In a bowl, mix einkorn flour, coconut sugar, and salt.

    • Cut in cold butter until mixture resembles coarse crumbs.

    • Add ice water, 1 tbsp at a time, until dough comes together. Form a disc, wrap in plastic, and chill 30–60 minutes.

  2. Prepare the filling:

    • Toss sliced apples with coconut sugar, maple syrup, cinnamon, lemon juice, and vanilla extract.

  3. Assemble the galette:

    • Preheat oven to 400°F (200°C).

    • Roll out chilled dough into a 12-inch circle. Transfer to parchment-lined baking sheet.

    • Pile apples in center, leaving ~2-inch border. Dot with butter pieces.

    • Fold edges over apples, pleating as needed. Brush dough with egg wash and sprinkle with sugar.

  4. Bake:

    • Bake 40–45 minutes until crust is golden and apples are tender.

    • Cool slightly before serving.
